Wash and dry all produce.

Heat @cooking oil{1%tbsp} in a large skillet over medium-high heat. Add @long green pepper{1%unit}, diced, and cook, stirring, until softened ~{5%minutes}. If needed, add a splash of water to help the pepper soften.

While the green pepper cooks, drain and rinse @black beans{15%oz}. Add the beans to the skillet along with @tex-mex paste{2%tbsp} and @southwest spice blend{1%tsp}. Stir well to coat and cook until heated through ~{2%minutes}.

Sprinkle the bean filling with @cheddar cheese{1%cup} and @mexican cheese blend{½%cup}. Cover the skillet until the cheese is fully melted ~{2%minutes}.

Warm @flour tortillas{8%unit} in a dry pan or according to package directions. Divide the cheesy bean mixture between tortillas. Top with sliced @scallions{2%unit}, @guacamole{2%tbsp}, and a generous drizzle of @smoky red pepper crema{2%tbsp}. Serve immediately.
