Wash and dry all produce. Trim, halve, and thinly slice @radishes{2%unit}. Halve @demi-baguette{2%unit} lengthwise. Halve @cucumber{1%unit} lengthwise; thinly slice on a diagonal into half-moons. Quarter @lime{1%unit}.

Place @shredded carrots{1%cup} and sliced radishes in a #medium bowl{}; toss with @ponzu sauce{1%tbsp}, half the @rice wine vinegar{1%tbsp}, @sugar{½%tsp}, and a big pinch of @salt{½%tsp} and @black pepper{½%tsp}. Microwave on high for ~{30%seconds}. Set aside, stirring occasionally, until ready to serve.

Tear @pulled pork{8%oz} into smaller pieces if necessary. Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add pork and @garlic powder{½%tsp}. Cook, stirring occasionally, until warmed through ~{2%minutes}. Stir in @hoisin sauce{1%tbsp}, @chicken stock concentrate{1%unit}, remaining rice wine vinegar, and @water{¼%cup}. Cook, stirring occasionally, until thickened ~{1%minute}. Taste and season with salt and pepper.

While pork cooks, toast baguettes. To bowl with carrot mixture, add cucumber and a squeeze of lime juice; toss to coat. Taste and season generously with salt and pepper. Spread cut sides of top buns with @mayonnaise{1%tbsp}. Fill buns with pork mixture and as many veggies as you like. Serve with remaining veggies and remaining lime wedges on the side.
