Wash and dry all produce. Preheat the broiler to high or oven to 500 degrees. Thinly slice @button mushrooms{8%oz}. Halve, peel, and thinly slice half @yellow onion{1%unit} (save the rest for another use). Strip leaves of @thyme{1%unit} stems. Discard the stems.

Heat a drizzle of @olive oil{2%tbsp} in a #medium ovenproof pan{} over medium heat. If you don't have an ovenproof pan, transfer to a baking dish before step 5. Add @button mushrooms{8%oz}, @thyme{1%unit}, and @yellow onion{1%unit}. Cook, tossing, for ~{5%minutes}, until softened and slightly golden. Season with @salt{1%tsp} and @pepper{1%tsp}. Add @veggie stock concentrate{1%unit} and @water{1½%cups} to the pan. Bring to a simmer.

Add @mushroom ravioli{16%oz} to the pan. Cover and cook ~{4%minutes}. Uncover and cook, spooning the broth over the mushroom ravioli, for ~{5%minutes}, until ravioli are tender and broth is thickened. If the liquid evaporates before the ravioli are tender, add a splash of water. To keep the ravioli from sticking to the bottom, gently shake the pan occasionally.

Make the Parmesan breadcrumbs: Meanwhile, combine @panko breadcrumbs{½%cup}, @parmesan cheese{½%cup}, a drizzle of olive oil, and a pinch of salt and pepper in a #small bowl{}.

Carefully fold @sour cream{½%cup} into the mushroom ravioli. Season with salt and pepper. You should have a thick, creamy sauce. If too thick, add a splash of water.

Broil: Sprinkle the pan with the panko and parmesan mixture. Place under the broiler for ~{1%minutes}, until golden brown. Enjoy!
