@salt{½%tsp}
@sugar{1%tsp}
@cooking oil{2%tbsp}
@black pepper{1%pinch}

Wash and dry all produce.

Heat @cooking oil{2%tbsp} in a #medium pot{} over medium-high heat. Add @onion{1%unit}, @long green pepper{1%unit}, scallion whites, and minced @jalapeño{1%unit}; season with @salt{½%tsp} and @black pepper{1%pinch}. Cook, stirring occasionally, until softened ~{4%minutes}.

Stir in @tomato paste{2%tbsp} until darkened in color ~{30%seconds}.

Divide chili between bowls. Top with @cheddar cheese{½%cup}, @sour cream{2%tbsp}, scallion greens, and as much pickled jalapeño (draining first) as you like. Serve.
