Halve, peel, and dice @onion{1%unit}. Core, deseed, and finely dice @long green pepper{1%unit}. Dice @tomato{1%unit} into ½-inch pieces. Cut @cauliflower florets{4%oz} into bite-size pieces. Pick leaves from @cilantro{1%bunch} stems and set aside.

Heat a drizzle of @cooking oil{1%tbsp} in a #medium pot{} over medium-high heat. Add onion and green pepper; cook, stirring occasionally, until browned and softened, ~{5%minutes}. Add another drizzle of oil. Stir in @southwest spice blend{1%tbsp}, @mexican spice blend{1%tbsp}, diced tomato, and @tomato paste{2%tbsp}; cook, stirring, until fragrant, ~{1%minute}.

Stir @black beans{1%can} and their liquid, @ground turkey{12%oz}, cauliflower, @tex-mex paste{1%tbsp}, @veggie stock concentrate{1%unit}, and 1½ cups @water{1½%cups} into pot with veggies. Bring to a simmer, then cover and reduce heat to medium low. Cook until cauliflower is tender and soup has thickened slightly, ~{10%minutes}. If soup isn’t thick enough, cook until it reaches desired consistency. If soup seems too thick, add a splash more water. Taste and season with @salt{1½%tsp} and @black pepper{1%tsp}.

Divide soup between bowls and sprinkle with reserved cilantro. Serve with @blue corn tortilla chips{1%cup} on the side.
