2Adjust oven rack to top position and preheat oven to 450°F. Wash and dry all produce. Peel and cube potatoes, then place in a medium pot with generously salted water. Bring to a boil and cook until fork-tender ⏱️ 15 minutes . Drain and set aside. -
3While potatoes cook, in a large bowl , combine organic ground beef, onion , panko breadcrumbs, garlic powder, ¼ tsp nutmeg, ¾ tsp salt, and ½ tsp black pepper. Mix until just combined and form into uniform meatballs.onion: 1 medium (grated) -
4Melt 1 tbsp butter in a large pan over medium-high heat. Add peas and cook, undisturbed, until lightly browned ⏱️ 2 minutes . Remove peas to a plate and cover to keep warm. -
5Heat a drizzle of cooking oil in the same pan over medium heat. Add onion and a pinch of salt. Cook, stirring occasionally, until onion is browned and softened ⏱️ 3 minutes .onion: 1 medium (sliced) -
6Slowly whisk 1 cup water into the pan with onions. Add beef stock concentrate, cream cheese, and ¼ tsp nutmeg. Whisk until cream cheese melts and gravy has thickened ⏱️ 3 minutes . Season to taste. -
7Add meatballs to the pan with gravy and toss gently to coat. Mash the cooked potatoes with sour cream, remaining butter, salt, and pepper until fluffy. Divide potatoes and peas between plates, top with meatballs and gravy, and serve immediately.
