Adjust oven rack to the top position and preheat broiler to high. Wash and dry all produce. Cook bacon in a #small skillet{} over medium heat until crispy, then drain on paper towels and crumble. Halve lemon and quarter tomato.

Place flatbreads dimpled sides down on a #baking sheet{}. -- Line sheet with foil for easy cleanup. Drizzle tops with olive oil and season with salt and black pepper. Broil until edges are lightly toasted ~{2%minutes}.

Remove baking sheet from oven. Flip flatbreads dimpled sides up. Spread roasted onion & garlic spread evenly over each. Divide mozzarella cheese and tomato quarters over flatbreads. Broil until cheese is melted and bubbly ~{2%minutes}.

Arrange baby lettuce on plates. Top with warm flatbreads, caesar dressing, and croutons. Grate parmesan cheese directly over everything. Serve with remaining lemon wedges on the side.
