Preheat oven to 425°F and adjust rack to top position. Wash and dry all produce.

While @sweet potatoes{2%medium} cook, trim and finely chop @scallions{1%bunch} greens. Quarter @pattypan squash{8%oz} lengthwise.

Melt @butter{2%tbsp} in a #large pan{} over medium-high heat. Add @panko breadcrumbs{1%cup} and toast, stirring, until golden and fragrant ~{2%minutes}.

Pat @steelhead trout{2%fillets} dry with paper towels and season with @salt{1%tsp} and @black pepper{1%tsp}. Drizzle skin sides with @cooking oil{1.5%tbsp} and rub to coat.

Meanwhile, heat remaining @cooking oil{1.5%tbsp} in a #large sauté pan{} over medium-high heat. Add @pattypan squash{8%oz} to hot pan and cook ~{4%minutes}, or until lightly browned and tender, stirring occasionally.

While squash cooks, to a #small bowl{} with reserved sauce, add @water{2%tbsp} 1 tsp at a time until mixture reaches a drizzling consistency.

Divide @steelhead trout{2%fillets}, @mashed sweet potatoes{}, and @pattypan squash{8%oz} between plates. Top trout with reserved sauce and serve.
