Wash and dry all produce. Preheat oven to 400°F. Core, seed, and thinly slice @yellow bell peppers{2%pieces}. Pick leaves from @cilantro{1%bunch} stems and finely chop, keeping leaves and stems separate. Peel and halve @red onion{1%unit}. Thinly slice one half and finely dice the other. Drain and rinse @black beans{2%cans}.

Toss bell peppers and sliced onion with a drizzle of @olive oil{2%tbsp} and a pinch of salt and pepper on a #baking sheet{}. Roast in oven until soft and browned ~{15%minutes}.

Heat a drizzle of olive oil in a #medium pot{} over medium heat. Add beans, then stir in @southwest spice blend{2%tbsp}, cilantro stems, ½ cup water, and @hot sauce{1%tsp} to taste. Season with salt and pepper. Bring to a simmer, cover, and cook until slightly thickened and creamy ~{8-10%minutes}.

While beans cook, core and dice @roma tomato{2%unit}. Zest @lime{1%unit} until you have ½ tsp zest, then cut into halves. Stir together tomato, diced onion, cilantro leaves, lime zest, and a squeeze of lime juice in a #small bowl{}. Season with salt and pepper.

Wrap @flour tortillas{4%unit} in #aluminum foil{}. Place in oven to warm ~{5%minutes}. Alternatively, wrap tortillas in a damp paper towel and microwave until warm ~{30%seconds}. After beans have simmered, remove from heat and mash with a #potato masher{} until mostly smooth.

Fill tortillas with beans, bell peppers, sliced onion, salsa, and @sour cream{½%cup}. For a fajita bar, arrange all components on individual plates and let everyone assemble their own.
