Wash and dry all produce. Peel and thinly slice @beets{2%unit} and @red onion{1%unit}. Finely chop @fresh dill{1%tbsp} and @fresh parsley{1%tbsp}.

In a #small saucepan{}, combine @rice vinegar{¼%cup}, @water{¼%cup}, @sugar{1%tbsp}, @salt{1%tsp}, and @turmeric{1%tsp}. Bring to a gentle simmer ~{2%minutes}. Remove from heat.

Place sliced beets and onion in a #heatproof bowl{}. Carefully pour the hot pickling liquid over them. Cover and let sit until cooled and quickly pickled ~{15%minutes}.

Heat @olive oil{1%tbsp} in a skillet over medium heat. Cut @ciabatta roll{1%unit} in half horizontally. Toast cut sides until golden and lightly crisp ~{1%minutes}.

Spread @ricotta cheese{½%cup} evenly over both toasted halves. Top with the pickled beets and onions, draining excess liquid. Sprinkle generously with fresh dill and parsley. Season with black pepper to taste and serve immediately.
