    Adjust oven rack to top position and preheat oven to 425°F. Wash and dry all produce.

    Toss green bell pepper and tomato on a baking sheet with a drizzle of cooking oil , ½ tsp cajun spice blend , and a pinch of salt . Roast until tender and lightly charred ⏱️ 15 minutes .

    Meanwhile, heat a drizzle of oil in a small pot over medium-high heat. Add garlic ; cook, stirring, until fragrant ⏱️ 30 seconds .

    Add jasmine rice , 1½ cups water , chicken stock concentrate , and the remaining cajun spice blend to the pot. Bring to a boil, then reduce heat to low, cover, and cook until rice is tender ⏱️ 15 minutes .

    While rice cooks, combine sour cream and as much hot sauce as you like in a small bowl . Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

    Rinse shrimp under cold water and pat dry with paper towels. In a small saucepan, bring ½ cup water to a simmer, add shrimp, and poach until pink and opaque ⏱️ 3 minutes . Remove with a slotted spoon.
