Adjust rack to top position and heat broiler to high. Wash and dry all produce.

Place @flatbreads{2%unit}, dimpled sides down, on a #baking sheet{}. Rub tops with a drizzle of @olive oil{1%tbsp}; season with @salt{to taste} and @black pepper{to taste}. TIP: Line the baking sheet with foil first for easy cleanup!

While flatbreads toast, in a #medium bowl{}, combine @carrot{1%unit}(shredded), @mini cucumber{1%unit}(shredded), half the @cilantro{1%bunch}(chopped), juice from half the @lime{1%unit}, @sugar{1%tsp}, and as much @shallot{1%unit}(thinly sliced) as you like. Season with a big pinch of salt and pepper. Set aside to pickle ~{10%minutes}.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add @ground pork{8%oz} and season with @garlic powder{½%tsp}, salt, and pepper. Cook, breaking up meat into pieces, until browned and cooked through ~{5%minutes}.

Once flatbreads are toasted, remove sheet from oven. Carefully flip flatbreads dimpled sides up; sprinkle evenly with @mozzarella cheese{1%cup} and top with pork. Return to broiler until cheese melts ~{2%minutes}.

In a #small bowl{}, whisk together @mayonnaise{2%tbsp}, @sriracha{1%tbsp}, and @ponzu sauce{2%tbsp} to make spicy mayo. Drizzle flatbreads with spicy mayo and slice into pieces. Top with pickled cucumber and carrot mixture. Serve immediately.
