Wash and dry all produce. Measure @water{1%cup} and set aside. Adjust oven rack to top position and preheat oven to 425°F.

Place @potatoes{2%medium}(peeled and quartered) in a #medium pot{} with enough salted water to cover by 2 inches. Bring to a boil and cook until tender ~{12%minutes}. Reserve ½ cup potato cooking liquid, then drain.

While potatoes cook, toss @asparagus{1%bunch}(trimmed) on a #baking sheet{} with a drizzle of @cooking oil{1%tbsp}, @salt{1%tsp}, and @black pepper{½%tsp}. Roast on top rack until tender ~{10%minutes}.

Meanwhile, pat @pork chops{2%pieces} dry with paper towels and season all over with half the @garlic powder{½%tsp}, salt, and black pepper.

Heat a drizzle of cooking oil in a #large skillet{} over medium heat. Add @scallions{2%stalks}(whites only), half the @dried thyme{½%tsp}, and a pinch of salt. Cook, stirring occasionally, until softened and fragrant ~{30%seconds}.
