Preheat oven to 450°F and position rack in the upper third. Halve, peel, and dice @yellow onion{1%unit} into ¼-inch pieces. Halve and dice @tomato{2%units}. Mince or grate @garlic{2%cloves}. Chop @kale{1%bunch} into bite-size pieces. Trim and thinly slice @scallions{2%units}.

Heat a large drizzle of @olive oil{1%tbsp} in a #large pan{} over medium-high heat. Add @ground pork{8%oz} and @tuscan heat spice{1%unit}, breaking up meat into pieces. Cook until lightly browned ~{2%minutes}. Toss in yellow onion and garlic, then season with salt and pepper. Cook until onion is just softened ~{2%minutes}.

Stir tomato and @tomato paste{3%tbsp} into pan and season with salt and pepper. Stir in kale in batches, allowing each batch to wilt before adding more. Continue cooking, stirring, until kale is fully wilted ~{2%minutes}.

Stir @arborio rice{1%cup}, @chicken stock concentrate{1%unit}, and @water{2½%cups} into pan. Bring to a boil, then stir in @butter{3%tbsp}. Remove from heat.

Lightly butter a #baking dish{} with 2 tsp of the buttered mixture. Transfer remaining mixture to dish. Sprinkle evenly with @parmesan cheese{2%tbsp} and @italian cheese blend{2%tbsp}. Cover dish tightly with aluminum foil. Bake in oven until liquids are absorbed and rice is tender ~{16%minutes}.

Remove foil from casserole and sprinkle with scallions. Return to oven and bake, uncovered, until cheese is lightly browned ~{3%minutes}. For an extra crispy top, place casserole under broiler ~{3%minutes}. Divide between plates and serve.
