Preheat oven to 425°F. Wash and dry all produce. Toss @brussels sprouts{1%cup} with @olive oil{1%tbsp}, @salt{½%tsp}, and @black pepper{½%tsp} on a #baking sheet{}. Roast ~{15%minutes}. Meanwhile, boil @potatoes{1%lb} in salted water until tender ~{15%minutes}. Drain and mash with @cooking oil{1%tsp} and @garlic powder{1%tsp}.

Melt @butter{2%tbsp} in a #medium pan{} over medium-high heat. Add half the @shallot{1%unit}(finely chopped), half the @dried thyme{½%tsp}, half the @dried rosemary{½%tsp}, @salt{½%tsp}, and @black pepper{½%tsp}. Cook, stirring occasionally, until shallot is softened ~{2-3%minutes}. Stir in @croutons{½%cup} and @sour cream{2%tbsp} to form the herb stuffing.

Lay @chicken cutlets{2%pieces} between sheets of plastic wrap and gently flatten. Spread the herb stuffing evenly over the chicken. Starting at the bottom, tightly roll the chicken over the stuffing, removing the plastic wrap as you go. Wrap each roll securely with @prosciutto{4%slices}. Roast chicken ~{20%minutes} until cooked through.

Remove the baking sheet from the oven. Carefully transfer the chicken to a #cutting board{}; return the Brussels sprouts to the top rack and continue roasting until browned and tender ~{4-6%minutes}.

Turn off the heat; stir @butter{1%tbsp}, @salt{½%tsp}, and @black pepper{½%tsp} into the mashed potatoes until creamy.

Slice the chicken crosswise. In the same pan, combine @chicken stock concentrate{1%tbsp} and @cranberry jam{2%tbsp}, simmering until thickened ~{2%minutes}. Serve chicken with pan sauce, mashed potatoes, and roasted Brussels sprouts.
