Wash and dry all produce. Halve, peel, and finely dice @red onion{1%unit}. Halve and mince @jalapeño{1%unit}, removing ribs and seeds for less heat. Dice @roma tomato{1%unit}. Cut @lime{1%unit} into wedges and reserve 2 halves for juice. In a #small bowl{}, reserve ¼ tsp of @southwest spice blend{1%unit} for later.

Heat @vegetable oil{1%tbsp} in a #large pan{} over medium heat. Add half the diced red onion and half the minced jalapeño. Cook, tossing occasionally, until slightly softened ~{2%minutes}.

Add @pulled pork{2%unit}, remaining southwest spice blend, and ¼ cup water to the pan. Break up the meat with a wooden spoon and cook, stirring, until combined and warmed through ~{3%minutes}.

Drain and rinse @black beans{1%unit}. Place them in a #medium bowl{} along with the diced roma tomato and remaining red onion and jalapeño. Squeeze in the juice from the 2 reserved lime halves. Season generously with salt and pepper, then toss to combine.

Wrap @flour tortillas{4%unit} in a damp paper towel and microwave on high until warm and soft ~{30%seconds}. Meanwhile, add @sour cream{2%tbsp} to the small bowl with the reserved southwest spice blend and stir to combine.

Divide the warm flour tortillas between plates. Spoon the pulled pork mixture onto each and sprinkle generously with @cheddar cheese{½%cup}. Serve with the black bean salsa on the side, along with the lime crema and wedges. Drizzle with hot sauce if desired.
