Adjust oven rack to middle position and preheat oven to 450°F. Wash and dry all produce. Toss @potatoes{1%lb}(cut into 1-inch clusters) with @olive oil{2%tbsp}, @garlic powder{½%tsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Spread on a lightly oiled #baking sheet{} and roast ~{25%minutes}.

While potatoes roast, pat @ranch steak{12%oz} dry with paper towels and season all over with @salt{1%tsp} and @black pepper{1%tsp}.

Heat a drizzle of @cooking oil{1%tsp} in a #large pan{} over high heat. Sear steak until browned and cooked to preference ~{8%minutes}. Transfer to a plate and rest ~{5%minutes}.

Reduce heat to medium in the same pan. Add @shallot{1%unit} and cook, stirring, until softened ~{2%minutes}. Stir in @beef stock concentrate{½%cup}, @sherry vinegar{2%tbsp}, @butter{2%tbsp}, and @sugar{½%tsp}. Simmer until sauce slightly thickens ~{2%minutes}.

In a #large bowl{}, toss @mixed greens{4%cups} with @sour cream{¼%cup} to make a creamy dressing, or toss with preferred vinaigrette. Season with @salt{1%tsp} and @black pepper{1%tsp}.

Slice steak against the grain. Plate potatoes, greens, and steak. Drizzle with sherry shallot sauce and sprinkle with @parmesan cheese{½%cup}.
