Preheat the #oven{} to 400°F. Core, seed, and remove white ribs from @red bell pepper{1%unit} and @yellow bell peppers{1%unit}, then thinly slice. Chop @cilantro{1%unit} leaves and stems, keeping them separate. Halve, peel, and finely dice @red onion{1%unit}. Drain and rinse @kidney beans{15%oz}.

Toss sliced peppers on a #baking sheet{} with a drizzle of @olive oil{2%tbsp} and a pinch of @salt{1%tsp} and @black pepper{1%tsp}. Place in oven ~{15%minutes} until soft and slightly charred.

Heat a drizzle of olive oil in a #medium pot{} over medium heat. Add diced onion and cook, tossing ~{4%minutes} until softened. Add beans, @southwest spice blend{1%tbsp}, cilantro stems, @water{¼%cup}, and @hot sauce{1%tsp} to pot. Season with salt and pepper. Cover and cook ~{10%minutes}, then coarsely mash with a #fork{}.

Meanwhile, zest and halve @lime{1%unit}. In a #small bowl{}, combine @sour cream{2%tbsp} with a pinch of lime zest and a squeeze of lime juice to taste. Season with salt and pepper.

Assemble fajitas using tortillas, mashed beans, roasted peppers, citrus sour cream, and cilantro leaves. Serve immediately.
