    whole wheat tortillas: 2 unit, asparagus: 10 oz, green bell pepper: 1 unit, dried oregano: 1 tsp, chipotle powder: ½ tsp, cilantro: 2 tbsp, yellow onion: 1 unit, mayonnaise: 2 tbsp, lime: 1 unit, roma tomato: 1 unit, mozzarella cheese: 1 c, avocado: 1 unit, olive oil: 2 tbsp, salt: 1 tsp, black pepper: ½ tsp

    Preheat oven to 400 degrees. Halve, peel, and thinly slice yellow onion. Core, seed, and remove white ribs from green bell pepper, then thinly slice. Trim and discard bottom inch of asparagus, then cut into 2-inch pieces. Halve, core, and seed roma tomato, then chop along with cilantro. Halve lime.

    Toss asparagus, onion, and bell pepper on a baking sheet with 1 tbsp olive oil and dried oregano. Season with salt and black pepper and roast ⏱️ 15 minutes , until softened and slightly caramelized.

    To make guacamole: halve, pit, and peel avocado, then scoop flesh into a small bowl . Mash with a fork until mostly smooth, then stir in chopped tomato, cilantro, and a squeeze of lime. Season with salt and black pepper. Set aside.

    To make chipotle mayo: in another small bowl , combine mayonnaise and chipotle powder. Set aside.

    Assemble quesadillas: spread two whole wheat tortillas with chipotle mayo, then layer mozzarella cheese, roasted vegetables, and another layer of mozzarella cheese. Top each with a whole wheat tortilla.

    Heat a large skillet over medium heat. Add one quesadilla and cook until underside browns and cheese begins to melt ⏱️ 3 minutes . Flip and cook another ⏱️ 4 minutes , until browned and cheese is melted. Transfer to baking sheet and place in oven to keep warm. Repeat with second quesadilla.

    Slice quesadillas into wedges and serve with guacamole.
