In a #small pot{}, combine @jasmine rice{¾%cups}, ¾ cup water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ~{15%minutes}. Keep covered off heat until ready to serve.

While rice cooks, wash and dry produce. Finely dice @tomato{1%unit}(diced). Halve, peel, and cut @onion{1%unit}(cut into ½-inch-thick wedges; mince one wedge for 1 tbsp). Zest and quarter @lime{1%unit}(zested and quartered). Core, deseed, and dice @long green pepper{1%unit}(diced into ½-inch pieces). Mince @cilantro{1%bunch}(minced).

In a #small bowl{}, combine tomato, minced onion, and a big squeeze of lime juice; season with salt. Add @smoky red pepper crema{1%packet} to a separate #small bowl{}. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency.

Fluff rice with a fork; stir in lime zest and half the cilantro. Season with salt and pepper. Divide rice between bowls and top with veggies, saucy tofu, salsa, crema, remaining cilantro, and any remaining sauce from pan. Serve with remaining lime wedges on the side.
