Prepare ingredients: Dice @potatoes{12%oz}, remove kernels from @corn{1½%cups}, trim @sugar snap peas{3%oz}, and thinly slice @scallions{2%unit}. Set aside @old bay seasoning{1%tsp}, @dried thyme{½%tsp}, and @garlic powder{¼%tsp}. Lightly coat scallops in @flour{2%tbsp} before attaching to cod. Keep @butter{2%tbsp} ready for finishing.

Adjust oven racks to top and middle positions and preheat oven to 425 degrees. Wash and dry all produce.

In a medium pot, bring your chowder base to a boil, then reduce heat to medium-low and simmer until soup has thickened and reduced ~{15%minutes}. Meanwhile, remove small side muscles from @scallops{4%oz} if necessary. Pat scallops and @icelandic cod{8%oz} dry with paper towels. TIP: To cook separately, heat a drizzle of @cooking oil{2%tbsp} in a large pan over medium-high heat. Season cod; cook until cooked through ~{2%minutes} per side. Transfer cod to a plate. Heat another drizzle of cooking oil in same pan. Season scallops; cook until cooked through ~{2%minutes} per side.

Heat a drizzle of cooking oil in a large ovenproof, preferably nonstick, pan over medium-high heat. Season scallop sides of icelandic cod with @salt{1%pinch} and @black pepper{1%pinch}, then carefully add to pan, scallop sides down. Cook, undisturbed, until a deep brown sear forms ~{2%minutes}. You may need to work in batches.

Once chowder has simmered ~{15%minutes}, stir in @crème fraîche{2%tbsp}, @cream cheese{2%tbsp}, and @vidalia onion paste{2%tbsp} until crème fraîche and cream cheese are completely dissolved.
