Preheat oven to 450 degrees. Wash and dry all produce.

Toss @red onion{1%medium}, @zucchini{2%medium}, and @tomato{2%medium} on a #baking sheet{} with a large drizzle of @olive oil{2%tbsp}, half the @fry seasoning{1%tbsp}, half the @cumin{2%tsp}, a pinch of @salt{1%tsp}, and a pinch of @black pepper{½%tsp}. Roast in the oven until tender and charred in spots ~{15%minutes}.

While veggies roast, heat a drizzle of @cooking oil{1%tbsp} in a #small pot{} over medium-high heat. Add @israeli couscous{1%cup}, scallion whites from @scallions{2%stalks}, and @veggie stock concentrate{2%tbsp}; cook, stirring constantly, until fragrant ~{30%seconds}. Stir in 1 cup water, cover, remove from heat, and let sit until liquid is absorbed ~{5%minutes}.

In a #small bowl{}, combine zest from @lemon{1%whole}, @yogurt{½%cup}, half the scallion greens, half the @garlic powder{1%tsp}, juice from one lemon wedge, and a pinch of salt. Stir to combine and set aside.

Pat @salmon{2%fillets} dry with paper towels; season all over with remaining fry seasoning, salt, and pepper. Heat a drizzle of olive oil in a #medium pan{} over medium-high heat. Add salmon and sear until crispy and cooked through ~{4%minutes} per side.

Stir remaining scallion greens, remaining garlic powder, and @butter{2%tbsp} into pot with couscous. Fluff with a fork, taste, and season with salt and pepper if desired. Serve salmon over couscous with roasted veggie jumble and lemon yogurt sauce.
