In a #small pot{}, combine @white rice{1%cup}, @water{1 ¼%cups}, and a pinch of @salt{1%tsp}. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ~{16%minutes}. Keep covered off heat until ready to use.

While rice cooks, wash and dry produce. Core, deseed, and dice @green bell pepper{1} into ½-inch pieces. Trim and thinly slice @scallions{2}, separating whites from greens. Dice @tomato{1} into ¼-inch pieces. Roughly chop @green olives{½%cup}. Quarter @lemon{1}.

Heat a large drizzle of @oil{2%tbsp} in a #large pan{} over medium-high heat. Add green bell pepper and scallion whites; cook, stirring occasionally, until lightly browned and tender ~{3%minutes}. Season with salt and @black pepper{½%tsp}. Turn off heat; transfer to a #large bowl{}. Wipe out pan.

While veggies cook, pat @tilapia{2%fillets} dry with paper towels. Season with half the @dried oregano{1%tsp}, salt, and black pepper. Once veggies are done, heat a large drizzle of oil in same pan over medium-high heat. Add tilapia and cook until opaque and cooked through ~{2%minutes} per side.

Fluff rice with a fork. Transfer rice to large bowl with bell pepper mixture. Add tomato, green olives, scallion greens, @garlic powder{½%tsp}, @greek vinaigrette{2%tbsp}, and a squeeze of lemon juice; stir to combine. Taste and season with salt and black pepper.

Divide rice between plates and top with tilapia. Serve with remaining lemon wedges on the side.
