Bring a #large pot{} of salted water to a boil. Wash and dry all produce.

Once water is boiling, add @lo mein noodles{8%oz} to the pot. Cook, stirring occasionally, until al dente ~{6%minutes}. Drain thoroughly; set aside until ready to use.

While noodles cook, briefly heat a #large pan{} over medium-high heat. Add @peanuts{¼%cup} and cook, stirring occasionally, until golden and fragrant ~{3%minutes}. Transfer to a plate and set aside.

Heat a large drizzle of @cooking oil{1%tbsp} in the same pan over medium-high heat. Add @scallions{3%unit}(whites) and @bell pepper{1%unit}(sliced); season with @salt{to taste} and @black pepper{to taste}. Stir-fry until just tender ~{2%minutes}. Transfer to a #medium bowl{} and set aside.

Heat a drizzle of oil and @butter{1%tbsp} in the pan over medium-high heat. Add @diced skinless dark meat chicken{12%oz} and @sesame ginger crunch{1%unit}. Cook, stirring occasionally, until browned and cooked through ~{5%minutes}.

Add the drained noodles, cooked vegetables, and @sweet soy glaze{2%tbsp} to the pan with the chicken. Stir in @sweet thai chili sauce{2%tbsp}, a squeeze of @lime{1}(juice), and a pinch of @lime{1}(zest). Toss everything together to coat evenly. Taste and season with salt and pepper if desired.

Divide the stir-fry between bowls. Top with the toasted peanuts, @crispy fried onions{½%cup}, fresh @cilantro{¼%cup}, and remaining lime wedges. Serve immediately.
