2In a small pot , combine jasmine rice, water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ⏱️ 15 minutes to ⏱️ 18 minutes . -
3While rice cooks, wash and dry all produce. -
4Heat a drizzle of cooking oil in a large pan over medium-high heat. Add tofu and a big pinch of salt. Cook, breaking into bite-sized pieces, until browned ⏱️ 3 minutes to ⏱️ 4 minutes . -
5Fluff rice with a fork; stir in lime zest and 1 tbsp butter. Season with salt and black pepper.
