    jasmine rice: 1 c, water: 1¼ cups, salt: 1 pinch, cooking oil: 1 tbsp, tofu: 1 pkg, lime: 1 unit, butter: 1 tbsp, black pepper: 1 pinch, shredded carrots: 1 c, sesame dressing: 2 tbsp, sweet soy glaze: 2 tbsp, mayonnaise: 2 tbsp, crispy fried onions: 2 tbsp, sriracha: 1 tbsp, cilantro: 1 bunch, sugar: 1 tsp

    In a small pot , combine jasmine rice, water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ⏱️ 15 minutes to ⏱️ 18 minutes .

    While rice cooks, wash and dry all produce.

    Heat a drizzle of cooking oil in a large pan over medium-high heat. Add tofu and a big pinch of salt. Cook, breaking into bite-sized pieces, until browned ⏱️ 3 minutes to ⏱️ 4 minutes .

    Fluff rice with a fork; stir in lime zest and 1 tbsp butter. Season with salt and black pepper.
