Wash and dry all produce. Trim the root ends from @baby bok choy{2%heads} and discard. Cut each head in half lengthwise, then slice crosswise into strips. Trim and thinly slice @scallions{2%stalks}, keeping the greens and whites separate. Peel and mince @ginger{1%piece} until you have 2 tbsp. Mince @garlic{2%cloves}.

Bring 2 cups of water to a boil in a #small pot{}. Add @jasmine rice{1%cups} to the pot, cover, and lower the heat to a simmer. Cook until tender ~{15%minutes}. Remove from heat and keep covered until serving.

In a #medium bowl{}, combine @soy sauce{2%tbsp}, @hoisin sauce{2%tbsp}, @honey{1%tbsp}, half the ginger, and half the garlic. Add @sirloin tips{12%oz} and toss to coat. Let marinate for up to 3 hours in the refrigerator if you have extra time.

Heat a drizzle of @vegetable oil{1%tbsp} in a #large pan{} over medium-high heat. Add the sirloin tips to the pan, leaving the excess marinade in the bowl. Cook, tossing occasionally, until browned and almost cooked through ~{3%minutes}. Remove from the pan and set aside.

Add the scallion whites, remaining ginger, remaining garlic, and another drizzle of vegetable oil to the same pan over medium heat. Cook, tossing, until fragrant ~{1%minute}. Add the baby bok choy and cook, tossing, until tender ~{3%minutes}. Season with @salt{1%pinch} and @pepper{1%pinch}. Return the sirloin tips to the pan along with the reserved marinade. Let bubble until a thick sauce forms ~{2%minutes}. Season with additional salt and pepper to taste.

Divide the rice between plates. Top with the stir-fry. Sprinkle with the reserved scallion greens and @sesame seeds{1%tbsp} and serve immediately.
