Bring a #medium pot{} of water to a boil. Add @salt{1%tsp} to water. Wash and dry produce.

Melt @butter{1%tbsp} in a #large pan{} over medium-high heat. Add @panko breadcrumbs{2%tbsp}; cook, stirring, until golden and toasted, ~{2%minutes}. Transfer to a plate.

Add @penne pasta{8%oz} to pot of boiling water. Cook, stirring occasionally, until al dente, ~{10%minutes}. Drain.

While pasta cooks, heat a large drizzle of @olive oil{1%tbsp} and @cooking oil{1%tsp} in same pan over medium-high heat. Stir in @button mushrooms{8%oz} and a pinch of salt. Cook, stirring occasionally, until browned and tender, ~{6%minutes}. Reduce heat to medium.

Stir @scallions{2%units} whites, @garlic powder{1%tsp}, and remaining butter into pan with mushrooms. Cook, stirring, until fragrant, ~{30%seconds}. Remove from heat. Stir in @cream cheese{2%oz}, @parmesan cheese{2%oz}, and @mushroom stock concentrate{1%unit} until melted and smooth. Add @shrimp{6%oz} and cook until opaque, ~{2%minutes}.

Stir drained penne pasta into pan with sauce until thoroughly coated, adding @water{2%tbsp} a splash at a time until sauce reaches a creamy consistency.

Season with @black pepper{1%tsp} and @truffle seasoning{1%tsp}. Serve topped with toasted panko, sliced @tomato{1%unit}, and remaining scallions.
