In a #medium pot{}, combine @water{4%cups} and @veggie stock concentrate{1%unit}. Bring to a boil, then reduce to a low simmer.

Heat a drizzle of @olive oil{2%tbsp} in a #large pan{} over medium-high heat. Add @button mushrooms{8%oz}; cook, stirring occasionally, until browned and slightly crispy ~{5%minutes}. Season with @salt{1%unit} and @black pepper{1%unit}.

Heat a drizzle of remaining olive oil in same pan over medium heat. Add @onion{1%unit} and @garlic{3%cloves}; cook, stirring, until slightly softened and lightly browned ~{2%minutes}.

Add @arborio rice{1½%cups} to pan; toast for 1-2 minutes. Add ½ cup of hot stock to pan with rice mixture; stir until liquid has mostly absorbed. Repeat with remaining stock—adding ½ cup at a time and stirring until liquid has mostly absorbed—until rice is al dente and risotto is creamy ~{25%minutes}. Season generously with salt and pepper. Depending on the size of your pan, you may need a little more or a little less liquid for the risotto.

Once risotto is done, stir in @butter{2%tbsp}, @grape tomatoes{4%oz}, @garlic herb butter{2%tbsp}, half the @parmesan cheese{2%oz}, and half the @chives{2%tbsp}. Cook until tomatoes are softened ~{2%minutes}. If risotto is too thick, stir in another splash of water or stock.

Divide risotto between bowls. Top with remaining chives, remaining Parmesan, and sliced @sirloin steak{8%oz}. Sprinkle with a pinch of @chili flakes{1%unit} to taste. Serve.
