Adjust rack to top position and preheat oven to 425 degrees F. Wash and dry all produce.

In a #small bowl{}, combine @smoky mustard{1%tbsp}, @mayonnaise{1%tbsp}, @crème fraîche{2%tbsp}, and half the @chives{2%tbsp}.

Pat @sirloin steak{12%oz} dry with a paper towel and season all over with @brown sugar bourbon seasoning{1%tsp}. Place on a #baking sheet{} and roast until desired doneness ~{20%minutes}.

While steak roasts, in a #large bowl{}, combine @tempura batter mix{½%cup}, ⅓ cup cold water, and @salt{½%tsp}. Whisk until smooth. If mixture seems too thick, add water 1 tbsp at a time until it reaches a pancake-batter-like consistency.

Slice @onion{1%large} into ½-inch thick rings and separate. Heat a ⅓-inch layer of @cooking oil{1%cup} in a #large pan{} over medium-high heat.

Dip onion rings into batter and carefully place in hot oil. Fry until golden and crisp ~{3%minutes} per side. Remove with a #slotted spoon{} and drain on a paper towel. Season immediately with salt.

Halve @ciabatta{2%rolls} and toast until golden. Spread mustard aioli on both halves. Layer with sliced steak and onion rings.
