Bring 1 cup water to a boil in a #small pot{}. When boiling, add @jasmine rice{½%cup}. Cover, reduce to a simmer, and cook until tender, ~{18%minutes}. Keep covered.

Wash and dry all produce. Meanwhile, halve, peel, and thinly slice @red onion{1%unit}. Core, seed, and thinly slice @red bell pepper{1%unit}. Trim and quarter @baby bok choy{1%bunch}, then separate leaves. Mince or grate @garlic{2%cloves}. Peel and mince @ginger{1%tbsp}.

In a #medium bowl{}, combine ginger, garlic, @soy sauce{3%tbsp}, @sugar{2%tsp}, and a drizzle of @olive oil{2%tbsp}. Add @beef sirloin tips{12%oz} and toss to coat. Season with @salt{1%tsp} and @pepper{1%tsp}.

Heat a drizzle of olive oil in a #large pan{} over medium-high heat. Add beef sirloin tips and toss until browned and cooked to desired doneness, ~{3%minutes}. Remove from pan and set aside.

Heat another drizzle of olive oil in same pan over medium-high heat. Add red bell pepper and red onion. Cook, tossing, until just tender, ~{3%minutes}. Add baby bok choy to pan and toss until tender, another ~{2%minutes}. If veggies won’t soften, add a splash of water. Season with salt and pepper.

Return beef sirloin tips to pan and toss to heat through. Serve stir-fry on a bed of jasmine rice.
