Wash and dry all produce. Trim and thinly slice @scallions{2%unit}, separating whites from greens. Zest and quarter @lime{2%unit}. Drain @pineapple{15%oz} over a #small bowl{}, reserving juice.

Heat a drizzle of @cooking oil{1%tbsp} in a #large pan{} over medium-high heat. Add @ground pork{12%oz} and a big pinch of @salt{¼%tsp}; cook, breaking up meat into pieces, until browned ~{3%minutes}. If there’s excess grease in your pan, carefully pour it out.

Meanwhile, in a #medium bowl{}, thoroughly combine @coleslaw mix{3%cup}, scallion greens, @mayonnaise{2%tbsp}, lime zest, 1 tbsp reserved pineapple juice, and a big squeeze of lime juice. Season generously with salt and pepper. Halve @potato buns{4%unit}; toast if desired.

Add scallion whites, @sweet and smoky bbq seasoning{1%tbsp}, and ¼ tsp @chipotle powder{¼%tsp} to pan with pork. Cook, stirring, until fragrant ~{1%minute}.

Add pineapple, @ketchup{2%tbsp}, half the @cornstarch{1%tsp}, remaining reserved pineapple juice, ⅓ cup @water{⅓%cup}, and a big squeeze of lime juice to pan with pork mixture. Simmer, stirring, until mixture has thickened and pork is cooked through ~{2%minutes}. Turn off heat. Season with salt and pepper to taste.

Divide pork filling and some slaw between buns. Divide sloppy joes between plates. Serve with any remaining slaw and lime wedges on the side.
