Wash and dry all produce.

Open package of @chopped chicken breast{10%oz} and drain off any excess liquid. Toss with @fry seasoning{1%tsp} and set aside.

Place @flour tortillas{4%unit} on a clean work surface. Sprinkle half of each tortilla with one-quarter of the @mozzarella cheese{1½%cups}. Top with chicken, finely sliced @shallot{1%unit}, @bbq sauce{4%tbsp}, and half the @cilantro{¼%cup}. Sprinkle with remaining mozzarella. Fold tortillas in half to create quesadillas.

Heat a #large pan{} over medium heat. Cook quesadillas, flipping once, until tortillas are golden brown and cheese is melted ~{4%minutes}. Cut quesadillas into wedges. Serve immediately with @smoky red pepper crema{2%tbsp} and remaining cilantro.
