@red bell pepper{1%unit}(thinly sliced)
@lime{2%unit}(cut into wedges)
@scallions{2%unit}(whites and greens separated)

@sour cream{2%tbsp}

Wash and dry all produce. Preheat oven to 400°F. Core, seed, and thinly slice red bell pepper. Trim and thinly slice scallions, keeping greens and whites separate. Cut limes into wedges. Thinly slice radishes.

Halve and pit avocado, scoop flesh into a #small bowl{}. Add 2 tbsp scallion greens and a squeeze of lime juice. Mash with a fork until smooth. Season with salt and pepper.

Heat a drizzle of olive oil in a #large pan{} over medium-high heat. Add bell pepper and cook, tossing, until softened and slightly charred ~{5%minutes}. Add scallion whites and cook ~{1%minute}. Season with salt and pepper.

Wrap flour tortillas in #aluminum foil{} and place in oven to warm. Alternatively, heat each tortilla over a medium-low flame for ~{15%seconds} per side until lightly charred. Set aside under a towel or foil.

Add ground beef and cumin to the pan with veggies. Cook, breaking up meat, until browned and cooked through ~{4%minutes}. Season with salt and pepper. Finish with a few squeezes of lime juice.

Spread each tortilla with guacamole, top with beef mixture and radish slices. Serve with lime wedges and sour cream for dolloping on top. Enjoy!
