Preheat oven to 425°F. Gently prick each @flour tortilla{6%unit} with a fork, then cut into 6 triangles. Place on a #baking sheet{} and toss with @cooking oil{2%tbsp}, salt, and pepper. Bake on top rack until lightly golden brown ~{10%minutes}. Remove and set aside to cool.

Halve, peel, and thinly slice @onion{1%unit} into ¼-inch strips. Halve, core, and thinly slice @green bell pepper{1%unit} into ¼-inch strips. Quarter @lime{1%unit}. Dice @tomato{1%unit} into ¼-inch pieces.

Toss onion on one side of a second #baking sheet{} with a drizzle of cooking oil, 1 tsp @southwest spice blend{1%tsp}, salt, and pepper. Toss bell pepper on the empty side with a drizzle of cooking oil, 1 tsp southwest spice blend, salt, and pepper. Roast on top rack until softened and lightly charred ~{20%minutes}.

Heat a drizzle of cooking oil in a #large pan{} over medium-high heat. Add @ground beef{12%oz}, @beef stock concentrate{1%tbsp}, @mexican spice blend{1%tsp}, and 2 tbsp water. Cook, breaking up meat, until cooked through ~{5%minutes}. Carefully drain excess grease. Transfer to a serving bowl and cover to keep warm. Wipe out pan.

Melt @butter{1%tbsp} in the same pan over medium-low heat. Sprinkle @flour{2%tbsp} and remaining southwest spice blend over melted butter; cook, stirring constantly, until fragrant ~{1%minute}. Slowly whisk in ¾ cup water, then add @cream cheese{4%oz}. Season with salt and pepper. Cook, whisking, until cream cheese melts and sauce thickens ~{3%minutes}. Remove from heat and stir in @pepper jack cheese{½%cup} and a big squeeze of lime juice. Taste and season with salt and pepper.

Serve tortilla chips, queso, Southwest beef, roasted veggies, tomato, @sour cream{¼%cup}, and remaining lime wedges family style. Let everyone build their own nachos.
