Wash and dry all produce.

Place @flour tortillas{4%pieces} on a clean work surface; sprinkle one half of each tortilla with @mexican cheese blend{1%cup} and the chicken mixture. Fold tortillas in half to enclose filling.

In a #small bowl{}, combine @tomato{1%unit}(diced), @scallions{4%pieces}(thinly sliced), @cilantro{1%bunch}(chopped), @mandarin orange slices{1%can}(drained and chopped), and juice from half the @lime{1%unit}; season with a pinch of salt.

Heat remaining oil in the pan over medium heat. Add assembled tortillas and cook until golden and cheese has melted ~{3%minutes} per side.
