Wash and dry all produce. In a #small pot{}, combine @jasmine rice{½%cup}, ¾ cup water, and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender ~{15%minutes}. Keep covered off heat until ready. Meanwhile, halve, peel, and thinly slice @onion{1%unit}. Core, deseed, and dice @long green pepper{1%unit}. Dice @tomato{1%unit}. Zest and quarter @lime{1%unit}.

In a #small bowl{}, combine @sour cream{2%tbsp}, a pinch of salt, and lime juice to taste. Add water 1 tsp at a time until mixture reaches a drizzling consistency. In a separate #small bowl{}, combine diced tomato, a drizzle of @olive oil{2%tsp}, a pinch of salt, and as much lime juice and lime zest as you like.

Heat a large drizzle of @cooking oil{2%tbsp} in a large, preferably ovenproof, pan over medium-high heat. Add @italian chicken sausage mix{12%oz} and cook, breaking up meat into pieces ~{1%minutes}. Add onion, long green pepper, and @southwest spice blend{2%tsp}. Cook, stirring, until veggies are lightly browned and sausage is cooked through ~{5%minutes}.

Add cooked rice, @chicken stock concentrate{1%unit}, @butter{1%tbsp}, and ¼ cup water to pan. Stir to thoroughly combine. TIP: If pan isn't ovenproof, transfer mixture now to a baking dish.

Top sausage mixture with @pepper jack cheese{½%cup}. Broil until cheese is bubbly ~{2%minutes}. TIP: Watch carefully to avoid burning.

Top broiled sausage mixture with salsa and crema. Drizzle with @hot sauce{1%tsp} if desired. Serve with any remaining lime wedges on the side.
