Preheat oven to 450 degrees. Bring a large pot of water to boil with a large pinch of @salt{pinch%unit}. Meanwhile, core, seed, and remove white veins from @red bell pepper{1%unit}, then cut into strips. Mince @garlic{2%clove}. Dice @fresh pork chorizo{10%oz} into 1/4-inch pieces.

Toss the peppers on a #baking sheet{} with ½ tablespoon @olive oil{1%tbsp} and season with @salt{pinch%unit} and @pepper{pinch%unit}. Roast for about ~{15%minutes}, until soft and charred on the edges.

Add @penne pasta{8%oz} to the boiling water and cook for ~{10%minutes}, until al dente.

Meanwhile, heat ½ tablespoon olive oil in a #large pan{} over medium heat. Add the chorizo and cook for about ~{4%minutes}, until beginning to crisp. Add the garlic and cook for ~{30%seconds}, until fragrant.

Add @diced tomatoes{14%oz} and ½ teaspoon @chili powder{½%tsp} to the pan. Stir in ½ teaspoon @sugar{½%tsp} and season with @salt{pinch%unit} and @pepper{pinch%unit}. Simmer until the pasta and peppers are done ~{5%minutes}.

Drain the penne and add it to the sauce along with the roasted peppers. Toss to combine.

Divide among bowls and sprinkle with @parmesan cheese{¼%cup}.
