Wash and dry all produce. Bring a #medium pot{} of salted water to a boil. Mince @garlic{2%cloves}. Peel and mince @ginger{1%piece}. Remove and discard stems from @kale{1%bunch} and roughly chop leaves. Halve, peel, and thinly slice @red onion{1%unit}. Finely mince @chili pepper{2%pieces}.

Heat a drizzle of @olive oil{1%tbsp} in a #large pot{} over medium heat. Add onion and toss until slightly softened ~{3%minutes}. Add garlic, ginger, and as much chili pepper as you like. Cook until fragrant ~{30%seconds}.

Add @ground pork{16%oz} and break up into pieces until browned ~{5%minutes}. Season with @salt{1%tsp} and @pepper{1%tsp}.

Meanwhile, add @udon noodles{2%packets} to boiling water, and cook until al dente ~{5%minutes}. Drain.

Add 4 cups water and @pho stock concentrate{2%units} to pot with pork. Add kale and @soy sauce{1%tbsp}, and stir to combine. Simmer until kale is tender ~{5%minutes}.

Add noodles to soup. Serve divided between bowls and enjoy!
