Wash and dry all produce.

While rice cooks, halve, peel, and thinly slice onion. Core and deseed bell pepper; slice into strips. Cut broccoli into bite-size pieces if necessary. Tip: cut the broccoli stem along with the florets for your stir-fry.

Cook jasmine rice according to package instructions. Heat cooking oil in a large pan over medium-high heat. Add ground pork and cook until browned. Add broccoli, bell pepper, onion, garlic, and ginger; stir-fry until vegetables are tender-crisp. Mix in sweet soy glaze, plum sauce, sriracha, salt, and black pepper; simmer until sauce thickens. Stir in butter until melted.

Fluff rice with a fork. Divide rice and stir-fry between plates. Garnish with peanuts and sliced scallions. Serve immediately.
