Preheat oven to 425°F. Wash and dry produce. Dice @sweet potato{8%oz} into ½-inch pieces. Trim and quarter @button mushrooms{4%oz}. Core, deseed, and dice @bell pepper{1%unit} into ½-inch pieces. Zest and quarter @lime{1%unit}. Trim and very thinly slice @radishes{2%unit} into rounds.

In a #medium bowl{}, toss sweet potato and mushrooms with half the @hoisin sauce{2%tbsp}, a drizzle of @cooking oil{2%tbsp}, @salt{1%tsp}, and @black pepper{1%tsp}. Spread out on one side of a #baking sheet{}. Toss bell pepper on empty side with a drizzle of oil; season with salt and pepper. Roast on top rack ~{15%minutes}.

While veggies roast, in a #small bowl{}, combine juice from half the lime, @sugar{½%tsp}, a splash of water, and a pinch of salt and pepper. Stir in sliced radishes. Cover with plastic wrap. Microwave ~{30%seconds}. Remove wrap, stir, and set aside to pickle.

In a second #small bowl{}, combine @mayonnaise{2%tbsp}, @sour cream{2%tbsp}, and as much @sriracha{1%tbsp} as desired. Start with half, then taste and add more if preferred.

Once veggies have roasted, remove sheet from oven. Using a spatula, toss sweet potato and mushrooms with a pinch of lime zest, remaining hoisin sauce, and half the @sesame seeds{1%tbsp}. Return to top rack until veggies are tender and glaze is tacky, ~{7%minutes} more.

Meanwhile, wrap @flour tortillas{4%unit} in damp paper towels and microwave until warm and pliable, ~{30%seconds}. Divide tortillas between plates; fill with roasted veggie mixture. Top with @crispy fried onions{1%oz}, pickled radishes (draining first), and remaining sesame seeds. Drizzle with creamy sriracha sauce. Serve with remaining lime wedges on the side.
