1Wash and dry all produce. Drain and rinse rice noodles . Halve, peel, and very thinly slice onion . Halve, peel, and thinly slice carrot . Core, deseed, and thinly slice bell pepper . Halve, peel, and thinly slice pork tenderloin . Halve, peel, and finely chop garlic cloves . Finely chop fresh ginger . 2In a large skillet , heat vegetable oil over medium-high heat. Add pork, salt , and black pepper . Cook, stirring, until browned and cooked through ⏱️ 5 minutes . Transfer to a medium bowl .vegetable oil: 1 tbsp, salt: 1 tsp, black pepper: 1 tsp

3In the same skillet, heat remaining oil. Add onion, carrot, and bell pepper. Cook, stirring, until tender-crisp ⏱️ 4 minutes . Add garlic, ginger, hoisin sauce , soy sauce , and rice vinegar .
