Preheat oven to 450°F.

Toss @zucchini{2%unit} on a #baking sheet{} with a drizzle of @cooking oil{}, ½ tsp @tuscan heat spice{}, @salt{}, and @black pepper{}. Roast on middle rack, tossing halfway through, until lightly browned and tender ~{14%minutes}.

While zucchini roasts, season @sirloin steak{8%oz} with @salt{}, @black pepper{}, and remaining tuscan heat spice. Heat a drizzle of cooking oil in a #large pan{} over medium-high heat. Sear steak until golden brown and cooked to desired doneness ~{4%minutes} per side. Remove to a plate and tent with foil.

In the same pan over medium heat, add another drizzle of cooking oil. Add @shallot{1%unit} and @garlic{2%cloves}(minced) and cook until lightly browned and slightly softened ~{3%minutes}. Stir in @sun-dried tomatoes{¼%cup} and @arborio rice{1%cup}, coating well.

Add 1 cup @water{} and @veggie stock concentrate{2%unit} to pan. Cook, stirring, until liquid has mostly absorbed. Repeat with remaining water—adding ½ cup at a time and stirring until liquid has absorbed—until rice is al dente and mixture is creamy ~{25%minutes}. -- TIP: Depending on the size of your pan, you may need a little more or a little less water.

Once risotto is done, remove from heat. Stir in @cream sauce base{1%unit}, half the @parmesan cheese{⅓%cup}, and @butter{2%tbsp} until melted and fully combined. Taste and season with salt and pepper as needed.

Divide risotto between plates. Top with sliced steak, roasted zucchini, diced @roma tomato{1%unit}, and remaining parmesan cheese. Serve immediately.
