In a #small pot{}, combine @white rice{½%cup}, @water{1¼%cup}, and a pinch of @salt{½%tsp}. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender ~{15%minutes}.

While rice cooks, wash and dry all produce.

Heat a #large pan{} over medium-high heat. Add @peanuts{¼%cup} and cook, stirring occasionally, until golden and fragrant ~{1%minutes}. Transfer to a plate.

Heat @cooking oil{1%tbsp} in the same pan over medium-high heat. Add @green bell pepper{1%unit}(diced) and @onion{1%unit}(diced). Cook, stirring occasionally, until browned and tender ~{6%minutes}. Season with salt and @black pepper{¼%tsp}.

Meanwhile, in a #small bowl{}, combine @sweet thai chili sauce{3%tbsp}, @sweet soy glaze{2%tbsp}, water{¼%cup}, and @sugar{½%tsp}. Stir until smooth.

Heat @butter{1%tbsp} and a drizzle of cooking oil in the pan over medium-high heat. Add @grilling cheese{4%oz}(cubed) and cook, turning occasionally, until browned ~{2%minutes}. Do not worry if cheese begins to stick; use a spatula to scrape cheese from the bottom of the pan and separate cubes.

Pour the sweet chili sauce mixture over the cheese and vegetables. Toss everything together until well coated and heated through ~{1%minute}.

Divide cooked rice between bowls and top with the stir-fry. Sprinkle with reserved peanuts and @scallions{2%unit}(thinly sliced). Serve with @lime{1%unit}(quartered) wedges on the side.
