Adjust rack to top position and preheat oven to 450 degrees. Wash and dry produce. Core, deseed, and dice @long green pepper{1%unit} and @bell pepper{1%unit} into ½-inch pieces. Dice @sweet potato{1%unit} into ½-inch pieces. Toss veggies on a #baking sheet{} with a drizzle of @cooking oil{1%tbsp} and a pinch of @salt{1%tsp} and @black pepper{1%tsp}. Roast, tossing halfway through, until browned and tender ~{20%minutes}.

Meanwhile, zest and quarter @lime{1%unit}. Trim and thinly slice @scallions{3%unit}, separating whites from greens. Peel and mince @garlic{2%cloves}. In a #small bowl{}, combine @sweet soy glaze{2½%tbsp}, @water{2%tbsp}, @sugar{½%tsp}, and a squeeze of lime juice. Set aside.

Pat @chicken cutlets{12%oz} dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a #large skillet{} over medium-high heat. Add chicken and cook until browned and cooked through ~{3%minutes} per side. Turn off heat and transfer to a plate.

Place 1 TBSP @butter{1%tbsp} in a second #microwave-safe bowl{}; microwave until melted ~{30%seconds}. Stir in a pinch of minced garlic and a pinch of lime zest; season with salt and pepper. Set aside.

Wipe out the skillet used for chicken and heat over medium-high heat. Add a drizzle of oil, scallion whites, and remaining garlic. Cook, stirring, until softened and fragrant ~{1%minute}. Pour in the sauce mixture and cook until slightly thickened ~{1%minute}. Turn off heat.

Once veggies are done, carefully toss with garlic lime butter; season generously with salt and pepper. Divide veggies and chicken between plates. Top chicken with pan sauce. Garnish with scallion greens. Serve with remaining lime wedges on the side.
