Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Trim @scallions{2%unit}(thinly sliced), separating whites from greens, and mince whites. Peel and mince @garlic{3%cloves} and @ginger{1%tbsp}. Dice @sweet potato{12%oz}(into ½-inch pieces). Core, deseed, and dice @bell pepper{1%unit}(into ½-inch pieces). Quarter @lime{1%unit}.

In a #large bowl{}, combine @ground pork{14%oz}, @panko breadcrumbs{¼%cup}, @ponzu sauce{1%tbsp}, scallion whites, garlic, and ginger. Season with @salt{½%tsp} and @black pepper{¼%tsp}. Form mixture into two 1-inch-tall loaves. Line one side of a #baking sheet{} with aluminum foil and lightly oil with @cooking oil{2%tbsp}; place loaves on foil-lined side. Fold up a bit of foil to create a barrier in the middle of the sheet.

Toss sweet potatoes and bell pepper on unlined side of sheet opposite porkloaves with a large drizzle of cooking oil, salt, and pepper. Roast on top rack until porkloaves are browned and veggies are almost tender ~{20%minutes}.

Meanwhile, in a #small bowl{}, combine @mayonnaise{2%tbsp} with a squeeze of lime juice to taste and as much @sriracha{1%tsp} as you like.

Once porkloaves and veggies have roasted ~{20%minutes}, remove sheet from oven. Carefully brush porkloaves with half the @sweet soy glaze{2%tbsp}(save the rest for serving). Return to top rack until porkloaves are cooked through, glaze is tacky, and veggies are tender ~{4%minutes}.

Top porkloaves with remaining sweet soy glaze. Drizzle porkloaves and veggie jumble with spicy lime mayo, sprinkle with scallion greens, and serve.
