    sweet thai chili sauce: 2 tbsp, ground beef: 12 oz, sesame seeds: 1 tbsp, mayonnaise: 2 tbsp, lime: 1 unit, flour tortillas: 4 unit, scallions: 2 unit, coleslaw mix: 2 c, sriracha: 1 tbsp, hoisin sauce: 2 tbsp, cooking oil: 2 tbsp, sugar: ¼ tsp

    Preheat oven to 450°F. Wash and dry all produce. Trim and slice scallions, separating whites from greens. Quarter lime.

    In a medium bowl , combine coleslaw mix, scallion greens, sugar, juice from half the lime, and a pinch of salt. Toss to coat.

    In a small bowl , combine sriracha and mayonnaise. Add water 1 tsp at a time until mixture reaches a drizzling consistency.

    Drizzle flour tortillas with 1 TBSP cooking oil; brush or rub to coat all over. Arrange on a baking sheet in a single layer. Gently prick each tortilla in a few places with a fork. Toast on middle rack, carefully flipping tortillas halfway through, until lightly golden ⏱️ 4 minutes per side. Watch carefully to avoid burning.

    While tortillas toast, heat a drizzle of cooking oil in a large pan over medium-high heat. Add ground beef and scallion whites. Cook, breaking up meat into pieces, until browned and cooked through ⏱️ 4 minutes . Stir in sesame seeds, sweet thai chili sauce, hoisin sauce, and ¼ cup water. Cook, stirring constantly, until sauce has thickened ⏱️ 1 minutes .

    Divide tortillas between plates; evenly top with beef and slaw. Drizzle tostadas with as much sriracha mayo as you like. Serve with remaining lime wedges on the side.
