Preheat oven to 425°F. Wash and dry all produce. Halve, deseed, and core @bell pepper{1%unit}. Cut @potatoes{2%medium} into ½-inch wedges. Halve, peel, and finely chop @shallot{2%unit}. Peel and mince @ginger{1%tbsp}. Thinly slice @mini cucumber{2%unit} into rounds. Halve @brioche buns{2%unit}.

Lightly oil a #baking sheet{}. Arrange bell pepper cut sides down on one side. Toss potatoes on the other side with a drizzle of @cooking oil{2%tbsp}, @fry seasoning{1%pack}, and a pinch of @salt{½%tsp} and @black pepper{¼%tsp}. Roast on the top rack, tossing potatoes halfway through, until pepper is softened and lightly charred and potatoes are golden and crispy ~{20%minutes}.

In a #small bowl{}, combine @mayonnaise{2%tbsp}, @sweet thai chili sauce{2%tbsp}, and 1 tsp shallot. Season with salt and pepper. In a #medium bowl{}, combine cucumber, @white wine vinegar{1%tbsp}, 1 tsp @sugar{1%tsp}, and a pinch of salt and pepper. Microwave until slightly softened ~{60%seconds}. Set aside, stirring occasionally.

In a #large bowl{}, combine @ground turkey{1%lb}, ginger, and 2 tbsp remaining shallot. Season with salt and pepper. Gently form mixture into two patties, each slightly wider than a bun.

Heat a drizzle of cooking oil in a #large pan{} over medium heat. Add patties and cook until browned and cooked through ~{5%minutes} to ~{8%minutes} per side. Meanwhile, toast buns directly on the oven rack until golden ~{2%minutes}.

Fill toasted buns with patties, drained pickles, roasted bell pepper, and a drizzle of chili aioli. Divide between plates and serve with potato wedges and remaining aioli on the side for dipping.
