Cover and reduce heat to low. Simmer until quinoa is tender and water has evaporated ~{15%minutes}. Keep covered off heat until ready to serve.

While quinoa cooks, place @mini cucumber{1%unit} under a plate and press down until it splits open. Cut into 1-inch pieces. Trim and cut @broccoli{1%head} florets into bite-size pieces if necessary. In a #medium bowl{}, combine @rice wine vinegar{1%tbsp}, @sugar{1%tsp}, and ½%tsp @salt{1%tsp}. Stir in cucumber and half the @sesame seeds{1%tbsp}. Set aside, stirring occasionally.

Meanwhile, in a #small bowl{}, combine @mayonnaise{1%tbsp} and remaining chili sauce. Whisk in water 1%tsp at a time until drizzling consistency is reached. Season with salt to taste.

Heat a drizzle of oil in a #medium pan{} over medium-high heat. Once hot, crack @eggs{2%unit} into pan and cover. Fry to your desired doneness ~{3%minutes}. Season with @black pepper{1%tsp} and salt. Turn off heat.
