Wash and dry all produce.

Melt @butter{1%tbsp} in a #small pot{} over medium-high heat. Add scallion whites and half the @ginger{1%inch}; cook, stirring frequently, until fragrant, ~{1%minute}.

While rice cooks, quarter @lime{1}. Trim and halve @radishes{1%cup}; thinly slice into half-moons. Trim and halve @mini cucumber{1} lengthwise; slice crosswise into ¼-inch-thick half-moons.

Pat @salmon{12%oz} dry with paper towels.

In a second #medium bowl{}, combine @rice wine vinegar{2%tbsp}, 1 tsp @sugar{2%tbsp}, a splash of water, a pinch of @salt{1%tsp}, and @black pepper{1%tsp}. Stir in radishes; cover with plastic wrap. Microwave until radishes are tender and bright pink, about ~{1%minute}.

In a third #medium bowl{}, combine @red cabbage and carrot mix{1%cup}, ½ tsp sugar, and juice from one lime wedge. Season generously with salt and pepper.

Fluff @jasmine rice{1%cup} with a fork. Drizzle salmon with @sweet soy glaze{3%tbsp} and @spicy mayo{3%tbsp}. Sprinkle with @sesame seeds{1%tsp} and finish with @cooking oil{1%tbsp} as desired.
