Adjust rack to top position and preheat oven to 425°F. Wash and dry produce.

Toss @potatoes{2%unit} on a baking sheet with a large drizzle of @cooking oil{1%tbsp}, @garlic powder{½%tsp}, @salt{½%tsp}, and @black pepper{¼%tsp}. Roast ~{15%minutes}.

While potatoes roast, in a #medium bowl{}, combine @mini cucumber{2%unit}, @carrot{2%unit}, @rice wine vinegar{2%tbsp}, half the @cilantro{¼%cup}, 1 tsp @sugar{2%tsp}, and as much sliced @red onion{1%unit} as you like. Season with a big pinch of salt and pepper.

In a #small bowl{}, combine @mayonnaise{2%tbsp} and half the @szechuan paste{2%tbsp}.

In a second #medium bowl{}, combine @ground pork{½%lb}, remaining cilantro, remaining Szechuan paste, and 1 tsp sugar. Form mixture into two patties, each slightly wider than a burger bun. Cook pork in a #large pan{} with a drizzle of oil until cooked through ~{5%minutes}.
